When I scrolled through the limits of Essential vs Pro, I noticed "mesh deformation" was marked under pro. Does this mean Essential cannot handle squash and stretch?

Hi TheBritain! You can, of course, squash and stretch with ESS, through bones!
Mesh deformation refers to the particular process of creating a grid of vertices on an image and deforming every single vertex manually: Meshes - Spine User Guide

Here are some examples of animations done with ESS:

Hi, and thank you for responding. To clarify it wouldn't be troublesome in Essentials over Pro to do something like a WillE Coyote stretch and squash?

Sorry to repeat the question I just want to clarify.

Sure you can do it, as I said, you just squash and stretch a bone, and the images attached to it will go along.
You can test bone scaling and shearing in the Spine trial to get a feeling of how it would work.
If you have a look at this page: Tools - Spine User Guide: Scale tool
Some stretching is in action on a single bone:

If you open the first link I posted of the examples, a lot of squash and stretch is going on on the dog various parts such as the eyes.
Of course, you can push it even more to the extreme (: test it out!
