Sorry, the last commit on the 4.1 branch you were using had a bug. This has now been fixed. Please update your copy of the spine-ue4 plugin and the spine-cpp sources.
As for tutorials: spine-ue4 works exactly the same in UE 4.27 and UE 5.1.
